Aztec Broccoli (Hauzontle) can be intimidating but there is no need to overthink this.

It can be used similar to spinach, and my favourite way to have it is in pasta.

Ingredients

100g Aztec Broccoli (or more)
200g Pasta of your choice (I prefer Fussili or Penne)
1/2 fermented or preserves lemons, minced (or use fresh lemon juice)
Chilli flakes
Olive Oil
Nutritional Yeast or Parmesan (optional)

Instructions

  1. Start cooking pasta according to instructions.
  2. Thoroughly wash Aztec Broccoli
  3. When pasta has 4 minutes left, add Aztec Broccoli into the same pan.
  4. Drain when pasta is al dente.
  5. Put the pan back on the hob on low setting, add minced lemon (or juice), chilli flakes, olive oil, black pepper and salt to taste (watch out for salt if using preserved lemons as they can be very salty!)
  6. Mix nicely for 1-2 minutes and it's ready to serve!
